I love banana bread and one day I decided that a glaze could probably make it better.  Sure enough, it was so good and I haven’t made another banana bread without it.  And then another day came and I thought maybe chocolate chips could rock this boat just a little bit more.  Obviously chocolate makes everything better, right?  Well, here is the result.  It’s so good and I can honestly tell you a loaf of this bread doesn’t last a day in our house!

The banana bread recipe is one I have adapted over the years from the Better Homes & Garden’s Cookbook.

  • 1 ½ cups flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • 1 egg
  • 1 cup mashed bananas (2 medium)
  • ¾ cup sugar
  • ¼ cup cooking oil
  • ½ cup chopped walnuts (optional)
  • ½ cup chocolate chips

Orange Glaze

  • ½ cup powdered sugar
  • Juice of ½ an orange
  • Zest of ¼ an orange

  1. Preheat the oven to 350°F
  2. Grease an 8×4 inch loaf pan and set aside.
  3. In a medium mixing bowl combine the flour, baking powder, baking soda, cinnamon and 1/8 tsp salt.
  4. In a food processor combine the egg, bananas, sugar and cooking oil and pulse until everything is incorporated and the bananas are in small chunks.
  5. Add the dry mixture to the batter and pulse until everything is mixed.
  6. Add the batter to a bowl and fold in the walnuts & chocolate chips.
  7. Spoon the batter into the greased loaf pan and bake for 50-55 minutes on until a wooden toothpick inserted near the center comes out clean.
  8. Cool in the pan on a wire rack for 10 minutes. Remove the loaf from the pan and cool on the rack.
  9. Mix the orange juice, zest & powdered sugar until smooth. When the bread is cool, place it on a platter and pour the glaze over the bread. Use a spoon to scoop and re-pour the glaze over the loaf until the glaze completely covers the loaf. Let the glaze harden and enjoy!
