This dish was inspired by my love for Zataran’s Dirty Rice.  In my younger years, my friend Shannon and I use to make a box and mix a little sour cream into it.  It was good comfort food!  Now that I’m a mother, I won’t buy that box of goodness mostly because it contains MSG.  That didn’t stop the cravings for it though and so during a Google search I found a recipe by Emeril that my husband and I altered to suit our tastes.  It is way better than Zataran’s and easy to make with the bonus of leftovers!

  • 2 Tbsp Olive Oil
  • 3/4 pound of Ground Italian Sausage
  • 1 pound ground turkey
  • 1 pound shrimp, cleaned, peeled, deveined & chopped into 1/2 inch chunks
  • 2 medium sized onions, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 stalks chopped celery
  • 4 cloves minced garlic
  • 1 Tbsp Emeril's Essence - recipe below
  • 2 cups low-sodium chicken stock
  • 2 bay leaves
  • 5 cups cooked rice, chilled
  • Salt & Pepper to taste

Emeril's Essence Creole Seasoning

  • 2 1/2 Tbsp paprika
  • 2 Tbsp Salt
  • 2 Tbsp Garlic Powder
  • 1 Tbsp Black Pepper
  • 1 Tbsp Onion Powder
  • 1 Tbsp Cayenne Pepper
  • 1 Tbsp Dried Leaf Oregano
  • 1 Tbsp Dried Thyme

Combine all ingredients thoroughly and store in an airtight jar or container.

  1. In a large saute pan, heat the oil over medium-high heat. Add the sausage and ground turkey and cook until it is cooked through and slightly browned (about 4-6 minutes).
  2. Add The onion, green & red bell peppers, celery and garlic and cook for 5 minutes, stirring frequently, until the vegetables soften.
  3. Mix in 1 Tbsp of Emeril’s Essence and pepper to taste. Cook for 1 to 2 more minutes mixing the spices through evenly.
  4. Add the shrimp, stock and bay leaves stirring well to remove any browned bits from the bottom of the pan.
  5. Bring to a boil then lower the heat and simmer for 5-7 minutes.
  6. Add the rice to the pan and stir to mix thoroughly, cooking until the rice is hot all the way through, about 5-10 minutes.
  7. Remove from the heat and take out the bay leaves.

*Serve this as a side dish or with a fresh green salad as a meal! For a creamier texture, mix in a little light sour cream!

*You can make this recipe healthier by substituting brown rice.
