This is a great recipe to serve with your favorite Mexican dish! ┬áIt’s easy to make and it will have your guests begging for the recipe!

Ingredients
  • 2 tbsp extra virgin olive oil
  • 1 medium onion
  • 1 cup long grain rice (basmati works great)
  • 4 cloves of garlic
  • 2 tsp chili powder
  • 3/4 tsp cumin
  • 1 1/4 cup water
  • 1-14.5 ounce can of Mexican Stewed Tomatoes
    Cut the tomatoes into small bite sized chunks
  • 1-4oz can green chilies
  • 1 1/4 tsp of Low Sodium Better Than Bouillon Chicken Base
  • 2 tbsp chopped fresh parsely

Instructions:


  1. In a large skillet, heat the 2 tbsp of olive oil. When the oil is hot, add the chopped onion and saute for 3-4 minutes. Add the rice and cook until the grains begin to lightly brown.
  2. Add the minced garlic,chili powder & cumin and saute for 2 minutes longer.
  3. Add the tomatoes (including the juice), green chilies, water & Chicken Base. Stir until everything is incorporated and bring to boil. Reduce the heat to low and cover for 30 minutes.
  4. Remove from heat and allow to sit covered for 5-10 minutes.
  5. Mix in the fresh parsley & serve.
