Want to impress your guests?  This is one of those recipes that will make your friends think they are fine dining.  So tasty and so quick and easy to make!

Ingredients
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1.5 cups white wine
  • 6 cloves garlic, minced
  • 3/4 lb asparagus, cut to bite sized pieces
  • 2 tomatoes, diced
  • 7 ounces of smoked salmon
  • 1 cup of cream
  • 6 ounces Parmigiano-Reggiano, shredded
  • 2 tbsp fresh dill, chopped
  • 1/2 cup toasted pine nuts
  • 1 cup pasta water
  • 12 ounces whole wheat spaghetti

Instructions:


  1. Bring a pot full of water to boil on the stove and cook the spaghetti according to the package directions.
  2. Heat the olive oil in a large skillet. When the oil is hot, add the onion and saute until soft & translucent (about 7-8 minutes).
  3. Add the garlic to the onions and saute for 1-2 minutes longer.
  4. Deglaze the pan by adding the wine and pasta water. Add the asparagus to the pan. Simmer for 2-3 minutes.
  5. Add the cream, tomatoes & smoked salmon to the skillet and bring up to a good simmer. Add the Parmigiano-Reggiano and mix in until it melts.
  6. Remove from heat and mix in the dill & pine nuts.
  7. Toss the sauce and spaghetti together and serve immediately.

* Note: You could easily lower the calorie and fat content of this dish by substituting half & half or milk and by reducing the amount of cheese. You may however need to thicken it a bit to make sure it has a good consistency. Arrowroot powder is a great thickening agent for dishes such as this.
