Swiss chard is a wonderfully tasty leafy green loaded with vitamins and phytonutrients. We love to use it in soups as stocks but one of our favorite ways to eat it is sauteed as a side dish.

Ingredients
  • 1 large bunch of swiss chard
    stems & center ribs cut out and chopped, leaves coarsely chopped
  • 1/3 cup of diced pancetta
  • 4 cloves of grated garlic
  • 1 ½ tbsp extra virgin olive oil
  • 1/3 cup white wine
  • 1 tbsp lemon juice
  • 1/4 cup shredded Parmesan cheese
  • Salt & Pepper to taste

Instructions:


  1. Heat the olive oil in a skillet.
  2. Add the pancetta and cook until it is crispy, about 3 minutes.
  3. Add the garlic to the pan and cook until it begins to lightly brown.
  4. Add the chopped stems and ribs as well as the wine and simmer until it has slightly softened, about 4 minutes.
  5. Stir in the chard leaves and cook until wilted.
  6. Remove from heat and mix in the lemon juice and parmesan cheese.
  7. Salt and pepper to taste.

**You can lower the fat, calories & sodium in this dish simply by making it vegetarian and omitting the pancetta.
