There are many different recipes floating around the web for One-Pot Cheeseburger Casserole and I have tinkered with a few of them to come up with this recipe which we really love in our house.  It’s quick & easy to make and best of all, there’s usually plenty of leftovers!

Ingredients
  • 1 tbsp extra virgin olive oil
  • 1 large yellow onion
  • 1.5 lbs ground turkey
  • Ground pepper to taste
  • 1-28 oz can of crushed tomatoes
  • 1-15 oz can of tomato sauce
  • 3 3/4 cups water
  • 4 tsp low sodium Better Than Bouillon Chicken Base
  • 1/4 cup ketchup
  • 2 tbsp dijon mustard
  • 17.6 ounces pasta, pick your favorite shape. We love to use shells or gemelli.
  • 2 cups shredded cheddar cheese
  • 2 tomatoes, chopped
  • 2 dill pickles, chopped
  • 3 cups shredded lettuce
  • 1/2 red onion, chopped

Optional

  • Crumbled Bleu Cheese
  • Frank's Red Hot

Instructions:


  1. In a large pot, heat the olive oil. When the oil is hot, add the chopped onion and cook until slightly softened (about 5min).
  2. Add the ground turkey to the pot and pepper to taste. Cook until the turkey is cooked through.
  3. Add the crushed tomatoes, tomato sauce, ketchup, dijon mustard, water, Better than Bouillion and pasta to the pot.
  4. Turn heat down, cover and simmer for 20 minutes, stirring occasionally.
  5. Stir in the shredded cheddar cheese and cover for 5 minutes, allowing the cheese to melt.
  6. Serve topped with chopped tomato, pickles, red onion & shredded lettuce. In our house, we also add bleu cheese crumbles and Frank’s Red Hot. It adds a ton of wonderful flavor. Try adding your favorite burger toppings!

* You can lower the sodium in this recipe by using low sodium tomato products and omitting the Better Than Bouillon.
