This recipe is a favorite in my family.  After my brother Jeremy was born, one of my Mom’s friends brought this over for our family for dinner, hence the reason we call it Chicken Jeremiah.  It was a popular recipe in our house when I was growing up and it still is in with my family today.  I have altered this recipe quite a bit over the years and in doing so have reduced the fat & calories by half while still retaining the same great flavor.  This is a great casserole to make if you want leftovers or if you are cooking for a large group.

Ingredients
  • 3 cans Campbell's Cream of Chicken Soup
    (Healthy Request)
  • 1/4 cup plus 1 tbsp lemon juice
  • 3/4 cup of light mayonnaise
  • 2 pounds asparagus,
    washed trimmed and cut into 1/2" size pieces
  • 2 boneless skinless chicken breasts
  • 3 boneless skinless chicken thighs
  • 6 cups of cooked rice
    (brown basmati is my favorite)
  • 2 ½ cups shredded cheddar cheese
  • pepper to taste

Instructions:


  1. Preheat oven to 350°F
  2. Add cream of chicken soup, mayonnaise & lemon juice to a bowl and mix well. Add pepper to taste.
  3. Grill chicken on a cast iron grill pan, covering with a lid (this assists in keeping the chicken moist).
  4. Steam asparagus for about 5-6 minutes or until it is bright green but still firm. Immerse the asparagus in ice water to stop it from cooking.
  5. Cut or shred chicken into small edible sized pieces.
  6. Smooth rice into an 11″ x 15″ baking dish and top with chicken & asparagus. Press it all down tightly into the pan and evenly spread the sauce over the top.
  7. Sprinkle the shredded cheese over the top and and place the casserole into the oven.
  8. Bake for 20-30 minutes or until the casserole is bubbling and the cheese is lightly browned.
  9. Allow casserole to cool on the counter for 10 minutes before serving.
