In our house there is nothing like a tasty fruit compote to top waffles with on Saturday morning.  This is fabulous on crêpes, pancakes, waffles, french toast or even an ice cream sundae.  Best of all it takes no time at all to throw together!

Ingredients
  • 2 cups frozen strawberries
  • 1.5 cups frozen blueberries
  • 1/3 cup maple syrup
  • 2 tbsp tapioca flour (cornstarch can be substituted)
  • 3 tbsp water

Instructions:


  1. Add the strawberries, blueberries & maple syrup into a pan and heat on medium high. The berries will simmer down with the maple syrup into a nice soup like consistency.
  2. Mix the tapioca flour and water until it’s smooth and slowly add it to the hot berry mixture stirring constantly until it reaches the desired consistency.
  3. Remove from heat and serve over waffles, pancakes, french toast, crêpes or cool and serve over an ice cream sundae!
