This is a tasty & quick weeknight dinner that is healthy and sure to please the whole family!

Ingredients
  • 16 frozen white fish sticks (preferably cod or halibut)
  • 8 corn tortillas
  • Fish Taco Sauce (below)
  • Pico De Gallo (below)
  • 2 cups thinly sliced ribbons of cabbage

Pico De Gallo

  • 4 medium tomatoes, diced
  • 1/2 medium red onion, finely chopped
  • 1 bunch cilantro, chopped

Fish Taco Sauce

  • 1 cup light sour cream
  • 1/2 cup light mayonnaise
  • Juice of 1 lemon
  • 1/2 tsp lemon zest
  • 1/4 tsp fresh ground pepper

Instructions:


  1. Bake fish sticks according to package directions.
  2. While fish sticks are baking mix tomatoes, red onion & cilantro and set aside.
  3. In a small bowl mix sour cream, mayonnaise, pepper, lemon juice & zest.
  4. Steam corn tortillas and wrap to keep warm.
  5. Assemble tacos using 1 1/2 to 2 fish sticks in each tortilla and top with sauce, pico de gallo & shredded cabbage.
