This is my son’s favorite meal next to tostadas.   It’s quick and makes a great weeknight dinner for a busy family, not to mention a wonderful way to get the kids to eat those veggies!

Ingredients
  • 1 can (16 oz) refried beans
  • 2 cups chopped lettuce
  • 2-3 chopped tomatoes
  • 1/2 onion, chopped
  • 1 cup cheddar cheese, shredded
  • Taco meat filling (recipe below)
  • 1 cup steamed rice
  • 1/4 cup raw sunflower seeds
  • light sour cream
  • salsa
  • guacamole
  • 8 flour tortillas, heated

Taco Filling

  • 1 1/2 - 2 Tbsp Olive Oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 1/2 - 2 Tbsp McCormicks Taco Seasoning
  • 1 - 13oz package of Gardein Meatless Ground
    or substitute the ground meat of your choice
  • 1/4 tsp fresh ground pepper
  • dash of red pepper flakes
  • 1/4 to 1/2 cup water or beer

Instructions:


  1. Heat the olive oil in a skillet on medium to medium high then add the onions. Cook the onions until they are soft, lightly browned and translucent (about 5-8 min).
  2. Add the minced garlic and cook for 1-2 minutes longer.
  3. Add the Gardein, taco seasoning, pepper, red pepper flakes and 1/8 cup of water or beer. Stir often adding water/beer when the pan becomes dry. Cook until everything is heated through and the spices are well incorporated.
  4. Heat the refried beans.
  5. Assemble burritos with beans, cheese, rice, meat filling, sour cream, guacamole, salsa, lettuce, tomatoes, onion & a sprinkling of sunflower seeds.
  6. Roll burrito up and enjoy!
